Hot Chocolate Mix

Homemade Hot Chocolate Mix

8 cups dry milk
4 3/4 cups powdered sugar
1 3/4 cups cocoa
1 1/2 cup non-dairy creamer
1 sm. pkg. instant chocolate pudding mix

Sift the ingredients into a large bowl.
Place the mix into an airtight containers.

Attach this to the jar:

Place 5 tblsps or (1/3 cup) Hot
Chocolate Mix into a mug.
Add water. Stir until Hot Chocolate mix
is dissolved. Garnish as desired with
marshmallows or whipped cream. I sometimes
just add a splash of cream or 1/2 & 1/2.

Cornflake Macaroons

Cornflake Macaroons

2 egg whites (beat til stiff)
1 cup sugar beaten into egg whites til it
forms stiff peaks
Fold in 1 cup flaked coconut
Then fold in 2 cups cornflakes
Add 1 tblsp vanilla

Drop by spoonful on non-stick pan. Bake 350
for 20 minutes.

This is an old-fashioned recipe but oh
so good. Enjoy!!

Upside Down Pizza

Upside Down Pizza

1 lb lean ground beef
1 small to med. onion chopped
1 small green bell pepper chopped
2 jars pizza sauce (14 oz. each)
1 package sliced pepperoni (6oz.)
1 can sliced ripe olives, drained 2-3 oz.
2 cups Original Bisquick® mix
1 cup milk
2 eggs
1 1/2 cups shredded pizza cheese or mozz.

Heat oven to 350°F. In 12-inch skillet,
cook beef, onion and bell pepper over
medium-high heat 5 to 7 minutes, stirring
occasionally, until beef is thoroughly
cooked; drain. Stir in pizza sauce,
pepperoni and olives; heat until hot.
Spoon into ungreased 13x9-inch glass baking
dish.

In medium bowl, stir Bisquick mix, milk
and eggs until blended. Pour evenly over
pepperoni mixture.

Bake uncovered about 25 minutes or until
crust is light brown. Sprinkle with cheese.
Bake uncovered about 5 minutes longer or
until cheese is melted. Should feed 6 - 8.

This is a easy favorite with the guys and
it is just as good the next day ;)

Orange Balls

Orange Balls

1 12 oz. box vanilla wafers (crushed)
1 1 lb. box powdered sugar
1/2 cup softened butter
1 6oz. can frozen orange juice concentrate (thawed)
1 cup finely chopped pecans
1 bag flaked coconut
**optional - 1 tsp vanilla or 1 tsp rum extract

Mix wafers, powdered sugar, soft butter, orange,
juice, nuts. Roll into small balls. Then roll
in to coconut. Seal well and freeze.

Serve almost frozen.

Cabbage Casserole

Cabbage Casserole

small head cabbage (chopped)
1 med to large onion (sliced thinly)
1 egg (beaten)
1 can cream of mushroom soup (dilute
with one cup chicken broth)
1 cup finely grated cheddar cheese
1 stick butter (melted)
salt, pepper and garlic pwdr to taste
1 1/2 sleeves Ritz crackers

Boil and cook cabbage until tender. Drain
well. Lightly saute onions in a little butter.

Mix together in bowl....cabbage, onions, soup,
beaten egg, cheese (add salt, pepper, garlic
to taste) Pour into greased casserole dish.
Then crush Ritz crackers all over the top.
Then drizzle melted butter over the top
of crackers.

Bake 350 degrees - 35-40 minutes
